The Tavern


Open exclusively during the summer, the Hotel Del Borgo restaurant was conceived as a gastronomic research project, inspired by maritime tradition and by the dialogue between two territories that may seem distant, yet share deep similarities: the Ligurian Riviera and the Amalfi Coast. Two lands shaped by the close relationship between sea and mountains, characterised by dramatic landscapes, Mediterranean crops, historic fishing traditions and ancient recipes linked to the Maritime Republics. From this shared heritage emerged a culinary concept focused on rare and often forgotten dishes, recovered from tradition and reinterpreted with care and respect.


The menu was intentionally concise and constantly evolving, following seasonal products, daily market availability and the chef’s inspiration. The cuisine developed through a guided journey among high-quality ingredients, many recognised as Slow Food Presidia, and through the use of genuinely local produce. The culinary identity moved from the rediscovery of ancient Ligurian recipes to selected Neapolitan specialities, creating a dialogue between regions united by the same deep connection to the sea, seasonality and the thoughtful simplicity of Mediterranean cuisine.
